Lei Shishak’s Easy Plant-Based Cooking for Two: Delicious Vegan Recipes to Enjoy Together

I pray you are having a blessed and fantastic start to this new year 2023 and making time to follow through with your ambitions and goals.  If I can be candid, I am not one to make New Year’s resolutions, but I do challenge myself by putting as much effort as possible into making improvements to my annoyingly frustrating habits such as procrastinating, being sedentary after getting home from work, not keeping in touch with people, and so much more.  Whatever your goals, ambitions and resolutions are for this year, I pray that you can achieve them!  You can do it!

I truly love vegan food, especially cooking my own vegan meals at home, as it gives me those warm and fuzzy feelings of accomplishment, especially when the food turns out perfect! I know that may sound a bit silly, but I honestly get delighted when I am in the kitchen experimenting with new vegan recipes and making vegan home-cooked food. One of my goals this month is writing a book review for an amazing and talented chef and cookbook author Lei Shishak, who holds a certificate in Plant-Based Nutrition from the T. Colin Campbell Center for Nutrition Studies; and has authored numerous books including her most recent book Easy Plant-Based Cooking for Two: Delicious Vegan Recipes to Enjoy Together.   Whether you are new to cooking vegan meals or a seasoned pro like myself, the recipes in this book are 100% vegan, user friendly, simple, fun, super easy to follow and the results are delicious, tasty, and mouthwatering!  

This lovely plant-based cookbook features 80 marvelous recipes for vegan desserts, dinners, mid-day snacks, sides, lunch, breakfast, morning beverages and so much more; and what I love most about this book is the simplicity of the recipes and affordability of the book.  If you are a smoothie lover and want to get your daily dose of kale, you would enjoy making and devouring the Kiwi Kale Smoothie, which is so easy to make!  Another fantastic feature about the recipes in this book are the number of people the recipes will serve.  For example, even though the recipes in this cookbook are for two people to enjoy, if you are instructing a plant-based cooking class or having a large gathering and want to impress your friends and family, you can easily adjust the meals to serve as many people as you desire.  I personally love vegan recipes that include chocolate, nuts, and raisins.  You will find a plethora of easy healthy recipes in this book that feature those palatable ingredients, and you can even add your own variations to the recipes, which is something I love doing with vegan recipes. Sweet potato fries are an all-time vegan favorite, but have you ever had a sweet potato taco? Oh yes…they are so yummy, and you will find one of the easiest recipes for sweet potato tacos in Lei Shishak’s Easy Plant-Based Cooking for Two: Delicious Vegan Recipes to Enjoy Together.
